Under Australian Consumer Law, gift cards sold to consumers must be valid for at least three years from the date of purchase. Individual venues may offer longer validity, and the expiry date is shown on the voucher itself. The venue that issued the voucher sets the terms.

It depends on the venue. Most offer set experiences — high tea for one, for two, or a family or spa package — and some also sell open-value vouchers you can put towards any amount. The options for each venue are listed on its gift card page here, and on the venue's own website.

Usually yes, but it is arranged at the venue's checkout rather than here. Most venues let you enter the recipient's name and a personal message, and email the voucher directly to them or to you to print and present. Check the options on the venue's website when you buy.
